Peanut butter cookies – Recipe

My dad LOVES peanut butter cookies, so I thought I would surprise him with these tasty treats at the weekend. They work better with crunchy peanut butter, but you can use smooth if you wish. 

Makes around 20


2 eggs

400g peanut butter

350g caster sugar

1 tsp salt

Peanuts for decoration


Pre-heat the oven to 180°c and line 2 baking trays with baking paper. 

Measure sugar, salt and peanut butter into a mixing bowl. Mix together (I use an electric whisk as it’s quick)

Add in the eggs and mix to form a dough. 

Roll into small balls and place on baking tray, pressing gently to slightly squash. 

Add a peanut on top for decoration. 

Bake in the oven for 10-12 minutes until golden brown. 

Remove and wait for them to cool before eating!
