Homemade Pot Noodle

As a kid there was nothing I loved more than a pot noodle. Now I’m an adult I have taken to making my own. It’s healthier and cheaper to do!

Makes one

Ingredients 


Dried noodles

1 spring onion

Handful of bean sprouts

Handful of Asian stir fry veg

Tofu or cooked chicken

1 tsp miso paste

1/2 vegetable stock cube

1 tsp soy sauce

Small bunch of coriander

Airtight container

Method

Cook the noodles as you usually would. I popped mine in boiling water for 4 minutes. When cooked, rinse under cold water. Place in the bottom of the container.

Add in the chopped spring onion, tofu, veg and bean sprouts

In a container, crumble in the stock cube and add the miso paste and spy sauce. Mix well.

Add the sauce to the jar and add in fresh coriander.

Close it and put it in the fridge until you want it. They usually stay pretty fresh for 3 days. Then add hot water, stir and eat!
