Quiche Lorraine – Recipe

My mother has made quiches for as long as I can remember. Ever since I was a little girl she has made them. I still hate them. However the rest of the family love them and so I thought I would pop it in my blog.


Ingredients 

For the Shortcrust pastry

6oz plain flour

3oz margarine

2 tbsp water

Pinch of salt

For the filling

1 onion chopped

4 rashers streaky bacon

1 tbsp oil

4oz cheddar cheese, grated

2 eggs

300ml milk

Salt and pepper

Method

Put flour and salt into a bowl. Cut marg into cubes and rub into the flour until it forms a breadcrumb consistency. Add enough water to bind together. Roll the pastry and line the flan case.

Fry the onion and bacon in the oil for a few minutes. Cool slightly and spread over the bottom of the pastry.

Sprinkle half the cheddar over the bacon and onion, beat the eggs, milk and salt and pepper and pour into the flan case.

Sprinkle the remaining cheese on top.

Bake at 180°c for 40 minutes.
