Lemon and Garlic Spaghetti – Recipe

I first had something similar in Portugal a couple of years ago and every time I feel pretty crappy I make it. I’m currently suffering from a suspected prolapsed disc at the bottom of my back and am in agony, so needed something quick, easy and tasty for tea tonight. So I decided to make this. Just remove the bacon part if you want a tasty vegan dish.

This makes one portion.

Ingredients


50g of spaghetti

4 rashers of streaky bacon

4 closed cup mushrooms

3 tablespoons of extra virgin olive oil

Juice of half a lemon

2 large cloves of garlic

Parsley to serve

Recipe

Boil the kettle for the spaghetti


Chop the mushrooms, thinly slice the garlic cloves and cut the bacon in to thin strips.


Fry in a little oil

Boil the spaghetti according to packet instructions

When spaghetti is cooked, drain water

Mix the juice of half a lemon with 3 tablespoons of oil. Mix well. Pour over spaghetti

Mix the mushrooms, bacon and garlic with the spaghetti and plate.

Add parsley to taste.

Serve with slices (or a whole baguette) of garlic bread
