Nectarine, prosciutto and watercress salad 

While searching the Internet for low-carb/low-calorie meals I stumbled across this great one from Nom nom paleo. Lidl didn’t have any peaches so I had to use nectarines instead, and it was absolutely brilliant. Here is a quick step-by-step guide of how to make it yourself. Is a taste sensation, and feels like summer in your mouth.

Serves 2 as a dinner

Ingredients 


1 bag of watercress (leaves and small stalks only)

2 ripe but firm nectarines

4 slices prosciutto

1 tbsp pistachios

Balsamic vinegar

Olive oil

Pepper

Method


Slice nectarines and a half and de-stone. Cut each half of the nectarine in two thirds. Cut one piece of prosciutto lengthways into thirds. Wrap one piece of prosciutto round each piece of nectarine.


Put each slice of nectarine into the pan and fry for one minute on each side. Then place the nectarine bottom side down and fry for a further minute.

Meanwhile divide the bag of watercress onto two plates. Mix 2 tablespoons of olive oil and 2 tablespoons of balsamic vinegar together.


Chop the pistachios roughly.


When the nectarines are cooked, place on the bed of watercress. Drizzle the olive oil/balsamic vinegar mix over. Top with chopped pistachios and a little pepper.

This is my favourite new recipe, and I will aim to eat it once a week. My eternal gratitude to nom nom paleo for this recipe!
