Pitta bread pizza

As some of you may know, I am attempting to go vegan in January as part of Veganuary. I am armed with 15 Minute Vegan, the cookbook by the extremely talented Little Miss Meat Free.

Today I made her version of pizza and it was amazing! I changed the ingredients up a little. Here is what I did.

Makes one pizza

Ingredients

1 Pitta bread

1 tbsp tomato puree

1 chestnut mushroom

1 tsp lazy chilli

Oregano

1/2 tsp fennel seeds

Olives, sliced

Small handful of basil leaves

Olive oil

Method

Preheat oven to 180 degrees. Pop the pitta on a baking tray and cover in tomato puree.

Add the sliced mushrooms, fennel seeds, chilli and oregano. Drizzle with oil.

Cook for 10 minutes until the bread is browned.

Add on the olives and basil and scoff!

You can use any toppings you wish, what would you put on it?

    I’m not a big fan of mushrooms or olives – what would you recommend as some substitutes?

    This pizza looks great otherwise!

      You could always make it with chorizo and pepperoni if you prefer meat? X
