Vermicelli Miso Ramen

I love rice noodle soup. Vermicelli miso is one of my favourite dishes. I really enjoy cooking Japanese food and you really don’t need meat to fill you up. Try this, I am sure you won’t be disappointed! Ready in 10 minutes and serves 2 and 500 calories.

Ingredients

2 tbsp Miso paste

2 tbsp lazy ginger & garlic paste

600 ml water

1 tbsp Chinese 5 spice

Handful edamame beans

2 carrots, chopped

2 Vermicelli nests/blocks

Handful of coriander

1 chilli (half sliced, half finely chopped)

1 tsp sesame seeds

One lime, juice only

Method

Fry garlic & ginger paste along with half the chilli, chopped finely on a medium heat for 2 minutes. Add in miso paste, Chinese 5 spice and water and bring to the boil.

Add in carrots and edamame beans and cook on high heat for 10 minutes.

Add in noodles and cook for 2 minutes until tender.

Divide into 2 bowls and sprinkle over coriander, the remaining chilli and sesame seeds. Cut the lime into chunks and serve alongside.

Enjoy!
